What is citric acid:

Citric acid (CA), also known as citric acid, with the molecular formula C₆H₈O₇, is an important organic acid, a colorless crystal, odorless, with a strong acidic taste, and soluble in water. According to its water content, it is divided into citric acid monohydrate and anhydrous citric acid. Citric acid has a wide range of uses, used in the food industry accounts for more than 75% of the production, can be used as a food acidifier, antioxidant, pH regulator, used in refreshing beverages, jams, fruits and pastries and other foods. Used in the pharmaceutical industry accounted for about 10%, mainly used as anticoagulant, antacid, flavoring agent, cosmetics and so on. Used in chemical industry accounts for about 15%, used as buffer, complexing agent, metal cleaning agent, mordant, gelling agent, coloring agent. In the electronics, textile, petroleum, leather, construction, photography, plastics, casting and ceramics and other industrial fields are very broad.

Citric acid production process:

1. Strain culture, in the industrial production of citric acid are used in the microbial fermentation method, at room temperature to cultivate strains of bacteria 10 ~ 14 days.

2. Raw material treatment, the raw material is selected, crushed, liquefied, filtered and so on.

3. Fermentation process, add the expanded strain into the treated material. Aerobic fermentation is carried out under constant temperature and certain aeration.

4. Extraction and separation, extraction is divided into fine extraction and crude extraction. Crude extraction: after the fermentation is finished, first carry out sterilization and filtration, then neutralization filtration and acid digestion filtration. Fine extraction: the filtrate after crude extraction is decolorized, ion-exchanged, evaporated and crystallized and finally separated to get the finished product citric acid.

5. Crystallization method, different crystallization methods can get different products, the crystallization of citric acid monohydrate is 80% solution, the temperature at 55 ℃, in the crystallizer under natural cooling with stirring, when the temperature drops to 40 ℃, add the crystal seed, the start of the crystallization, control the temperature is not more than 36 ℃, at this time, the product is citric acid monohydrate; if the solution is concentrated at 60 ℃ under the condition of 83%, cooled to 46 ℃ to join the seed, and maintain the temperature at 40 ~ 60 ℃ slowly, and then add the seed, and the product is citric acid monohydrate. Maintain the temperature at 40 ~ 60 ℃ slowly crystallize, and eventually drop to 38 ℃, the product is anhydrous citric acid. The crystal paste is centrifuged densely to get crystalline commercial citric acid.
